My little one is a “chosen vegetarian,” as my pediatrician says, meaning he doesn’t care for meat or chicken, and favors everything veggie. This keeps me on the hunt for a punch of protein whenever I can mix it in. Luckily, protein can be found in pasta, quinoa, rice and other great sources, like beans and nuts of course, but I’m still always on the hunt for ways to incorporate more.
I found this recipe on Weelicious.com and thought it was such a great addition I had to share it! Give it a try, it’s delightful 🙂
Apple Walnut Baby Puree (Makes 6 Serving)
2 Apples, cored & peeled (Pink Lady, Fuji or Gala are all good choices)
1/4 Cup Walnuts, shelled & halved
1/8 Tsp Cinnamon
1. Place apples and walnuts in a steamer pot over boiling water.
2. Cook for 7 minutes or until apples are fork tender.
3. Place apples, walnuts, cinnamon and 3 tbsp of the water from the steamer pot in a food processor and puree for 3 minutes or until smooth.
4. Cool and serve.
